Host chef Pete Evans joins the chefs for visits to a Californian coffee roaster and the shores of San Diego to find the perfect ingredients. They also embark on a trip to Catalina Offshore, one of the region's premier seafood purveyors. D

As Joseph crosses the region, he encounters First Nations Nuxalk people smoking salmon, a fisherman seeking prawns and a wilderness hike with Canada's third highest waterfall on the route.G
