Mexico -- One Plate at a Time with Rick Bayless  "A Tour of Traditions"  Ask anyone about traditional cooking in the Yucatan and you're bound to hear the name Miriam Peraza, a grandmotherly dynamo who knows every nook and cranny. She brings Rick to the bustling Mercado de Lucas de Galvez in Merida for a quick tour that includes a rare look at the making of recado spice pastes. Flanked by villagers in the remote town of Yaxunah, Miriam and Rick drop in to watch the making of pit-cooked cochinita pibil, the Yucatan's iconic dish of achiote-smothered, pit-cooked suckling pig. Lidia begins today's meal with a creamy risotto alla Milanese with saffron and marrow bone followed by a succulent quail stuffed with Italian sausage and mushrooms. For dessert, it's an Italian classic - light and creamy panna cotta with seasonal berries. D

Then, tasting expert Jack Bishop challenges Chris to a tasting of tortilla chips. And finally, test cook Erin McMurrer reveals the secrets to perfect chicken chilaquiles. D

Simply Ming  "Carla Hall"  This week, Top Chef All Star and host of The Chew, Carla Hall stops by Ming's loft kitchen. Carla goes back to her Tennessee roots with country greens, tangy chow-chow pickles, and hot water corn bread, while Ming pulls out the pressure cooker to whip up a hearty red roast pork. East meets South with these chefs' favorite dishes, this week on Simply Ming!. D

Steven Raichlen's Project Smoke  "Tropical Smoke"  Barbecue originated in the Caribbean-literally-with a Taino Indian smoker-grill called a barbacoa. This show salutes tropical barbecue, from French West Indian buccaneer chicken to traditional Mexican barbacoa. Learn how to smoke snapper to make a spicy fish dip and use a handheld smoker to prepare a lime- and mint-scented mezcalini cocktail. D

Islands Without Cars with Kira Hesser  "Ireland's Inis Meain"  According to legend, Oliver Cromwell, the 17th-century fanatical Prostestant "Lord Protector" of England, gave the Irish Catholics a choice: They could go to hell or go to Connacht. Some went farther, to islands off Ireland's west coast, including Inis Meain. Hesser explores Ireland's pre-colonial past as the 150 Gaelic-speaking inhabitants of this wet rock in the Atlantic try to figure out how to manage their legacy and lifestyle just outside of the contaminating influences of the modern world.G
