Hubert Keller: Secrets of a Chef  "Mustard Madness"  There's a reason that grocery stores have an unending offering of mustards: they offer an exciting dimension of flavor to everything from ballpark hotdogs to the most sophisticated of dishes. Chef Keller shows the fun and ease of making homemade mustard including a number of flavor variations and uses them in two fabulous recipes. Chef Paul Prudhomme's Always Cooking!  "How to Make A Turducken"  Turducken -- a turkey, stuffed with a duck, stuffed with a chicken, with oyster dressing inside the chicken, Andouille dressing between the chicken and the duck, and cornbread dressing between the duck and the turkey. It's a lot of fun to let your guests think you're serving them a regular holiday turkey. When you start to carve the "turkey," they'll be quite surprised to see you cut through its "bones!". D
