Mexico -- One Plate at a Time with Rick Bayless  "Extraordinarily Delicious Ensenada"  Fish tacos embody Ensenada's history in one bite: Fresh fish from pristine waters encased in crispy batter influenced by Asian immigrants, topped with Spanish-inspired creamy sauces, wrapped up in a very Mexican corn tortilla and spiked with chile. We seek out some of the best versions at Mariscos El Norteno, a stall opposite the Ensenada Fish market, and a 30-year old corner stand, Los Originales El Chopipo. No trip to Ensenada would be complete for a foodie without a stop at La Guerrerense where Sabina Bandera Gonzalez has been serving the best seafood ceviches and tostadas for more than 29 years. D

Paint This with Jerry Yarnell  "The Falls, Part 1"  In this opening segment, Jerry takes his students through the process of under painting each segment of the painting. Beginning with the sky, then the background trees, waterfall, middle ground, body of water, and then the foreground rocks. He finishes by adding darker trees in background. D

Burt Wolf: Travels & Traditions  "Ticino, Switzerland"  The Italian speaking Ticino is the most southerly part of Switzerland and one of the most beautiful parts of Europe. Burt takes viewers on a helicopter tour of the ancient castles, visits a 1000 year old mystic church, rides the Centrovalli railroad into mountain villages that have become national treasures, presents the traditional foods of the region, tours the open markets, and guides us through the towns of Gandria, Locarno, Lugano, and Ascona. D

Dialogue  "Idaho's Lottery"  Almost half of Idahoans purchased a lottery ticket in the last 12 months. But is the Idaho Lottery a good bet for the state? The Idaho Legislature's Office of Performance Evaluations is releasing a report reviewing the agency's operations. This week on Dialogue, host Joan Cartan-Hansen talks with Jeffrey Anderson, the executive director of the Idaho Lottery, about that report and the future of Idaho's Lottery.G

Austin City Limits  "Steve Martin/Sarah Jarosz"  Austin's own Jarosz, age 19, opens with her original bluegrass songs and is backed up by two equally talented teenage musicians. Comedian Steve Martin shows off his musicianship on the banjo. He appears with North Carolina's Steep Canyon Rangers; together they present much of the music and some of the jokes from the live show they toured the nation with in spring 2010.G

Michael Feinstein's American Songbook  "Saloon Singer"  Feinstein examines the allure of musical nightlife, from Mississippi juke joints to the neon lights of Las Vegas. He delves into the history of nightclub entertainment, looking at the Cotton Club and Sinatra's Rat Pack. He talks to pioneers of the form, including entertainer Rose Marie, and poet and author Maya Angelou, who once made her living doing a calypso club act in San Francisco.G

An Evening with Valerie Simpson in Honor of Nick Ashford   Gwen Ifill interviews Valerie Simpson, who for more than 40 years wrote hit-making songs with her husband, the late Nick Ashford. Ashford & Simpson's classic songs include: "Ain't No Mountain High Enough," "Ain't Nothing Like the Real Thing," "Reach Out and Touch (Somebody's Hand)" and "I'm Every Woman." As performers, their best-known duets are "Solid" and "Found a Cure. D
