Next, equipment expert Adam Ried reviews knife sets in the Equipment Corner, and test cook Becky Hays shows Chris how to make Potato Casserole with Bacon and Caramelized Onion. And finally, gadget guru Lisa McManus reveals her top pick among mandolines. D

Great American Seafood Cook-Off   Fires blazed and seafood sizzled as New Orleans hosted the fifth annual Great American Seafood Cook-Off in August 2008. During the two-day competition, 15 chefs from 14 different states prepared their best dishes using the seafood indigenous to their state. Famed New Orleans chef John Besh, the winner of the 2004 competition and the 2006 James Beard Foundation's Best Chef of the Southeast, hosted the event. D

Kimchi Chronicles  "The Chicken Chronicles"  Beginning in Andong, the spiritual capital of Korea, Marja participates in the area's festive masked dance ritual and learns about the local salted mackerel before getting into jjimtak, Andong's real specialty. Along Chicken Alley, Marja and her adopted cousin April sample tons of the spicy stir-fry made with chicken, noodles and vegetables. Next Marja hits up Chuncheon for dakgalbi, their famous chicken dish flavored with gochujang, the red pepper paste that informs nearly every Korean dish. D
