Next, equipment expert Adam Reid reviews electric pressure cookers in the Equipment Corner. Then, science expert Guy Crosby teaches Chris about the science behind brining. And finally, test cook Julia Collin Davison reveals a recipe for Easier Fried Chicken. D

Simply Ming  "Dante Demagistris & Garlic"  Everyone loves garlic, but if you don't handle it properly, it can take you to the culinary dark side-whether undercooked or overcooked. On this episode of SIMPLY MING, Ming zeros in on prepping garlic the right way. Joined by Boston chef Dante De Magistris, Ming uses garlic and some mystery ingredients to create two new dishes on the spot, Beef and Broccolini Stir Fry with Mango Puree and Basil Ricotta Gnocchi with Shrimp and Asparagus. Mexico -- One Plate at a Time with Rick Bayless  "Salsas That Cook"  In their Chicago backyard, Rick and his daughter, Lanie, gather the last of the season's tomatoes to make a big batch of Salsa Mexicana, the fresh tomato salsa sometimes known as Pico de Gallo. And that's the starting point for a fast-paced salsa dance that goes way beyond tomatoes. In Mexico, salsas can be bright and fresh, dark and earthy, red or green, raw or roasted - and they're more of a condiment for food than a dip for chips. D
