These farmers are young, hardworking, and mission-driven toward environmental stewardship and ethical farming. These young people are turning to small-scale farming because they strive to make a real difference in the way our food is produced. D

Cyberchase  "Fit to Be Heroes"  The CyberSquad and their new friend Scanner embark on a quest to build a new Encryptor Chip for Motherboard and cure her virus. With Hacker in hot pursuit, the kids must run, ski, canoe and climb their way to the end of the mission. In the process, they learn that a little activity over time adds up. D

Quilting Arts  "Back to Basics"  Today's episode features back to basic tips and more controlled, traditional techniques. Catherine Redford constructs a little quilt from traditional Square-in-a-Square blocks using a paper foundation for accuracy. Sarah Ann Smith takes the guesswork out of choosing the right needle for the thread you want to use. D

Paint This With Jerry Yarnell  "A Colorful Gateway, Part 4"  In the final session Jerry begins by explaining the details he will be adding. Then he proceeds to show how to finish the fence pickets and horizontal cross-braces. Then he begins adding highlights on stone pathway and pots. D

Pati's Mexican Table  "Isla Mujeres Inspired"  Isla Mujeres is a beautiful, peaceful paradise just across the Bahia de Mujeres (Bay of Women) from Cancun Mexico. Known for beautiful white sand beaches, crystal clear turquoise waters and the friendliest locals in the Mexican Caribbean, Isla Mujeres has become a haven for people from all over the world. Pati takes a day to explore this gorgeous island and try the local delicacy, tikin xic, fish marinated in a thick red sauce diluted with the juice of sour oranges and spices and wrapped in banana leaves for cooking. Mexico -- One Plate at a Time with Rick Bayless  "Chocolate Dreams, Cacao Fantasies"  Belgian-born chocolatier Mathieu Brees brings Rick deep in the jungles of Ticul for a tour of cacao groves. The serene setting is the backdrop for a complete bean-to-bar chocolate education, with Mathieu, Rick and the plantation's caretaker tromping around the lovingly farmed cacao fields. Then, Rick and Mathieu head to the Ki' Xocolatl chocolate factory in Merida. D

This Old House  "Arlington Arts & Crafts Details Make the House Beautiful"  The kitchen island countertop is installed and the crew starts on a fieldstone wall in the front yard. Wallpaper covers a new secret door in the upstairs foyer. In the basement, Richard checks the finished heating, cooling and ventilation systems. D

Globe Trekker  "East Texas"  Zay Harding takes roping lessons and experiences the famous Gun Show in Ft. Worth, visits the Book Depository with an eyewitness to the Kennedy assassination in Dallas, travels to the oil fields in Kilgore, stops at the Huntsville State Penitentiary, tours the Johnson Space Center with Alan Bean in Houston and celebrates the 4th of July in Chappell Hill. D

Lidia's Kitchen  "Gnocchi"  If there were another name for Lidia's family, it would be the gnocchi family. They love making them together and eating them. Lidia starts with a butternut squash gnocchi that is as soft as a feather and served with a velvety sage and butter sauce. D

Cook's Country  "Prime Rib with All The Fixings"  Test cook Bridget Lancaster shows host Christopher Kimball how to make the ultimate prime rib and potatoes with red wine-orange sauce at home. Then, test cook Christie Morrison reveals the steps for green goddess dressing. Next, equipment expert Adam Ried reveals his top picks for roasting racks. D

Simply Ming  "Jamie Bissonnette"  Today on Simply Ming, Ming is cooking at home with Jamie Bissonnette, James Beard award-winning chef. Both chefs take on rice, creating two amazing dishes from one simple ingredient! Ming uses crispy chicken sausage and scallions to create a flavorful spin on classic fried rice, while Jamie creates a savory paella from seasonal ingredients. D

Steven Raichlen's Project Smoke  "Behind The Smoke"  Come behind the smoke as Steven pushes the envelope with a refreshing lime and mint mezcalini, hay-smoked quail eggs, Danish smoked shrimp and, believe it or not, smoked ice cream!
