Mexico -- One Plate at a Time with Rick Bayless  "Chocolate & Coffee from Bean to Cup"  In Mexico, it is just as common to start your day with a cup of steaming hot chocolate as it is with coffee. Little wonder, when the chocolate is made from freshly roasted cacao beans and seasoned with cinnamon and a touch of sugar. Rick takes us to world-renowned Mayordomo near the main market in Oaxaca and to Seasons of My Heart Cooking School to see the process from two perspectives. D

America's Test Kitchen from Cook's Illustrated  "A Fancy Finale"  Test cook Julia Collin Davison shows host Christopher Kimball how to make the ultimate dessert, Chocolate-Espresso Dacquoise. Chris then reveals the science behind egg whites. And finally, Chris answers viewer questions in Letters to the Editor. D

Scrapbook Soup  "Cards for Everyday Occasions"  Every occasion no matter how big or small deserves a card - and today we've got designs for everyday occasions. This Old House  "Arlington Italianate Project 2014/Concrete Jungle"  Working around the antique fieldstone foundation, Kevin and Norm find Tom and mason Mark McCullough replacing the inadequate foundation under the addition and pouring a new slab in the basement with a concrete curb to bolster the walls. Breaking through the living room ceiling, they discover a lot more headroom, along with the original plaster molding and medallion, almost completely intact. D

Ask This Old House  "Installing Crown Molding in Seattle/Replacing a Rotted Fence Post"  Tom heads to Seattle to install crown molding. Roger replaces a rotted fence post. Kevin explains the difference between cement, concrete and mortar. D

Antiques Roadshow  "Boise, Hour Two"  Host Mark L. Walberg and appraiser Gary Piattoni head to the Old Idaho State Penitentiary to discuss law enforcement collectibles. Highlights at Expo Idaho include a mid-century pin-up painting by Earl Moran, and a complete set of lobby cards from the 1951 film The Day the Earth Stood Still, a film the guest spent nine cents to see in theaters. There is also an inherited 1911 Edward Hopper etching titled "The Cat Boat," appraised for $250,000. Part 2 of 3G

Moyers & Company  "Neil deGrasse Tyson on Science, Religion and the Universe"  Spacetime Odyssey on the National Geographic Channel and Fox TV. Tyson speculates not only on the nature of our expanding, accelerating universe and the dark energy and dark matter that may control its destiny but on the possibility of many parallel universes. "Why should nature make anything in ones?" he asks. D

PBS NewsHour Weekend   In November, India launched a mission to Mars in an attempt to become the fourth nation and first Asian country to reach the red planet. The Indian Mars Orbiter Mission is a point of immense national pride and will be completed for just over $70 million dollars, a tiny fraction of the cost spent by NASA on similar programs. But is spending any resources on a mission to Mars wise when hundreds of millions of Indians struggle to meet basic needs? Hari Sreenivasan reports from Bangalore, India. D

Doctor Who Series  "Journey to the Centre of the TARDIS"  A spaceship salvage team drags the TARDIS on board, sending its systems into meltdown. As the Doctor marshals the motley salvage crew outside, he realizes Clara is still trapped within his malfunctioning ship, pursued by a dangerous group of ossified monsters. He has just 30 minutes to find Clara and save his TARDIS before it self-destructs.G
