Martha Stewart's Cooking School  "Preserving"  Martha demonstrates two of the oldest preserving techniques, confit and salting, and shows how viewers can put them to use in the home kitchen. Martha makes an assortment of confits - starting with the most classic: duck, which can be served on its own or as a rich addition to salads, then followed by lemon and tomato confits, both of which make excellent condiments for grilled or roasted meats. She then shows how to make gravlax, a delicious cured salmon appetizer. D

This Old House  "Essex 2012/13, Human Centered Design, and Demo"  Kevin visits the Institute for Human Centered Design and one of architect Sally DeGan's accessibly designed projects; the bad shed dormer is removed at the house, and work starts on a barrier-free entry. D

Rick Steves' Europe  "Venice Sidetrips"  Rick puts on hip boots to wade into the muck of Venice and takes a speedboat tour of the lagoon. He visits Padua, Vicenza, Verona and Ravenna on the mainland.G

Travelscope  "Germany's Winter Carnival"  Joseph dons his jester's cap and heads to the German state of Baden-Wuerttemberg for Fasnet -- Fasnacht -- Carnival. Each town may call it by a different name, but they all agree it's a non-stop community party that celebrates local culture and chases away the winter blues. Some of the historic carnival characters, like the Narro, date back to the festival's beginning 500 years ago while others are the products of lively modern-day imaginations. D

Lidia's Italy In America  "Chicago: Chicago's Chicken Vesuvio"  Lidia travels to the Windy City to visit Caputo's, a family-owned Italian grocery in Elmwood Park, a very Italian suburb of Chicago. Lidia also brings her viewers for a stroll along the main thoroughfare of Chicago's Little Italy, Taylor Street, which is currently undergoing a major Renaissance. Grandma joins Lidia in the kitchen as her taste-tester, while Lidia prepares Cauliflower Soup and Chicken Vesuvio. D

Simply Ming  "On the Road in San Antonio with Diana Barrios Trevino"  Simply Ming heads to Texas on this special episode based in San Antonio. Ming joins Chef Diana Barrios Trevino and her family at their famous restaurant, Los Barrios, and learns how to make simple, delicious, flavorful Tex-Mex cuisine right along side Diana and her brother. After "shopping" in the Trevino's family kitchen, Ming comes up with his own take on Tex-Mex cuisine. D

Primal Grill with Steven Raichlen  "In A Pickle"  Brining may seem like a relatively modern technique, but it's centuries, if not millennia, old. In fact, that's the origin of the English word pickle-pockel was the Old English word for brine. Brining has the dual advantages of keeping intrinsically dry foods, like pork chops and chicken breasts, moist on the grill, and it also adds an extra layer of flavor. D
